Description

The 2021 Château Cheval Blanc Le Petit Cheval Saint-Émilion Grand Cru is the second label of the legendary Château Cheval Blanc from Saint-Émilion. This vintage is a blend of 60% Merlot, 33% Cabernet Sauvignon and 7% Cabernet Franc. The wine was aged for 18 months in used oak barrels, which contributes to its refined structure and aromatic complexity.

In the glass, the wine has a deep ruby red color. The nose opens with aromas of black cherries, cassis, violets, tobacco and a hint of spice. On the palate, the wine is medium to full-bodied, with silky tannins and a fresh acidity that balances the flavors. The finish is long and elegant, with a mineral touch that gives the wine a modern and refined style.

The Le Petit Cheval 2021 is considered an excellent second wine, reflecting the quality and terroir of Château Cheval Blanc. It is already accessible, but is expected to develop further in the coming years.

1. Grilled veal cutlet with mushroom gravy

The subtle meaty flavour of veal matches the elegance of the wine, while a mushroom jus enhances those earthy notes that complement the Cabernet Franc and Merlot in the blend.

2. Redfish fillet with lentils and red wine-shallot sauce

The wine has enough acidity and finesse to also go with richer fish. Lentils add texture and the sauce completes the dish without being overpowering.

3. Chicken leg with tarragon, fennel and roasted potatoes

The freshness of the dish complements the lively acidity of the wine. Tarragon and fennel add spiciness and complexity that intertwine beautifully with the aromatic character of the wine.

4. Roasted vegetable lasagna with tomato, aubergine and béchamel sauce

A vegetarian option where the roasted flavours and creamy sauce provide structure and warmth. The wine holds its own thanks to its acidity and elegant fruit.

5. Quail stuffed with truffle and foie gras, served with roasted parsnips

This dish plays on both the silky texture and complexity of the wine. The combination of richness and earthiness subtly matches the refined character of Le Petit Cheval.

6. Beetroot and veal fillet tartare with a smoked celeriac cream

A surprising, modern combination in which both the structure and the taste profile of the wine come into their own. Smokiness, umami and fresh earthy tones enhance the character of the wine.
