Description

Discover the exclusive Gianfranco Es, an icon among Primitivo wines, originating from a carefully managed micro-production of only 7,000 bottles per year. This is a result of an extremely low yield, with an average of only 200 grams of grapes per vine harvested from a 50-year-old vineyard. Through rigorous pruning techniques, only a few bunches remain per vine, allowing each grape to benefit from the maximum nutrition that the ancient roots extract from the deep, nutritious soil. The biodynamic principles used during cultivation emphasize the commitment to sustainability and quality.

At the winery, the carefully selected grapes undergo a soft pressing, followed by a fermentation and maceration process in 600-litre oak barrels at a temperature between 23-25°C. After the initial processing, the wine is aged for approximately 10 months in new French oak, which adds additional complexity and structure. The wine is bottled without the use of fining agents and without filtration, and then aged in the bottle for a minimum of 6 months before release.

The Gianfranco Es presents a deep concentration of flavors with an incredibly fresh acid structure that is perfectly balanced. This makes it not only the best high-end Primitivo on the market, but also a wine of unprecedented depth and complexity that is highly regarded by connoisseurs and critics. Every aspect of this wine, from the vineyard to the glass, testifies to the art of winemaking and the passion for quality that characterizes Gianfranco Fino. This is a must-have for collectors and a true experience for every lover of exceptional Italian wines.

1. Tagliatelle with tomato sauce and roasted aubergine

The juicy tomato sauce provides a soft counterpoint to the fuller ripe fruit in the wine, while the roasted eggplant enhances the spicy notes.

2. Grilled ribeye with rosemary and garlic

The fatty meat is balanced by the firm structure of the wine. The rosemary and garlic accentuate the Mediterranean and spicy notes.

3. Rice dish with chorizo and paprika

The smokiness of the chorizo provides body alongside the tannins of the wine. Paprika adds fruity sweetness that harmonizes with the black fruit profile.

4. Polenta with beef stew and Parmesan cheese

The rich stew prepares the wine with its deep flavours, while the cheese brightens the fruit and softens the wine.

5. Roasted mushroom risotto with sage

The earthy tones of mushrooms and sage blend seamlessly with the hint of Mediterranean herbs in the wine. The texture is an exciting combination.

6. Stuffed chicken fillet with mozzarella and sun-dried tomatoes

The juiciness of the fish preparation or stuffed chicken creates a lively contrast with the concentrated flavours of the Primitivo, while the dish retains its elegant acidity.

Wijnhuis

Start winegrowing in 2004 and make the best wine in Italy 10 years later? Sounds like a romantic dream, but Gianfranco Fino has only just done it. He started in Manduria with a small plot of land with 50-year-old Primitivo vines, striving for an extremely low yield per vine and, unlike many other winemakers, relying on the naturally occurring wild yeasts. Slowly he expanded the number of hectares and also planted Negroamaro.

A perfectionist with an eye for detail who does everything differently in the vineyard than the rest. He even lets his grapes dry on the vine for a while for even more flavor and sugar concentration. Although this reduces the alcohol percentage to a great height, without disturbing the balance in the wine. That drive and idiosyncratic approach has ensured that Fino's wines are among the absolute top in Italy, as witnessed by the superlatives in Gambero Rosso. His achievements have also definitively established Puglia's name as a reference for quality wine.
