The Pedro Ximenez grape is a Spanish white grape variety that belongs to the Vitis Vinifera that can create a high sugar content. In Spanish viticulture, the grape is used for Malaga wine, among other things. In recent years, the grape has also been produced more as a dry white wine. The Pedro Ximenez is also often abbreviated to PX. The PX is very dark in color, and the wine is often almost viscous thick. This high sugar content in the wine is due to the special drying process. By letting the grape dry, a high sugar value is created. As soon as the wine starts to ferment, the wine is fortified with alcohol. This keeps the wine with the fruity flavors. The maturation is then continued in wooden barrels.

What does wine from the Pedro Ximenez grape taste like?

The taste is extremely sweet, reminiscent of dried subtropical fruits such as raisins, figs and dates. Accompanied with aromas of honey, grape syrup, jam and candied fruit. At the same time, it is also reminiscent of freshly ground coffee, dark chocolate, cocoa and licorice.
